Guacamole
- 1 avocado
- 1/2 lime juice
- Salt and pepper
- 1/2 red onion - finely diced
- 1 lettuce - roughly chopped
- 2 red chillis - roughly chopped
- Small handful of coriander leaves
- 1/2 block of feta - crumbled
- Salt and pepper

METHOD Prep crickets Cook crickets as per instructions on the BUG Kit. Make guacamole & prep toppings Slice open an avocado and scoop contents into a bowl and mash with a fork. Squeeze in your lime juice and season with salt and pepper and mix in. Slice, chop and prepare all the toppings you'd like to add to your tacos, and place them into separate bowls or ramekins for serving. Warm tacos & serve Warm the tacos in a frying pan on high heat, flipping to ensure both sides are warm. Spread guacamole on the base of the tortilla, load up with crickets, and your favourite toppings. Add a squeeze of lime for extra freshness. Grubs up! |
